Cliff Richard's Carrot Cake (My Bake)

Now this cake is to a family friend, who's very much into Cliff Richard as I am with .

The recipe for Cliff's Carrot Cake was taken from the food sector of a Daily Mail "Weekend" magazine that comes every Saturday (sadly I've forgotten which date it was)

It was, and I quote: "Inspired by his mother's memory, the singer recreates his favourite cake for our Dementia UK Celebrity Tea Party", so I made this in time for her birthday on the 19th February.

Now, here, I reduced the recipe by half as most of her family are vegan and wouldn't eat this because it has eggs in it, but I knew that the Pudding Club she and my folks are a part of would enjoy it.
